Nigara VG XEOS Gyuto 255mm Ebony Handle
Currently on their 8th generation of blademakers, Nigara Hamono’s storied lineage originated in sword-making during the Edo period. Under the guidance of Mr. Go Yoshizawa, this famous knife house in Hirosaki city is known for their striking Damascus patterns and use of both Aogami carbon and SG2 stainless steel.
VG XEOS, when compared to VG10, shows distinct metallurgical differences. VG XEOS contains reduced carbon and cobalt, while chromium, vanadium, and molybdenum levels are increased. Furthermore, nickel and tungsten have been incorporated. These compositional changes result in a finer microstructure improving edge retention and overall blade durability. VG XEOS knives maintain sharpness for extended periods and requiring less maintenance.
A chef's knife ('Gyuto' in Japanese) is the most versatile blade that can handle almost anything in the kitchen. Their shape and often generous edge length mean that whether it's cutting small tomatoes or portioning a large roast, you can do it with one blade. Most cooks have multiple chef's knives and it is not hard to justify getting one more when it has so much utility.
