These knives are a rarity and a real treat when we get them. Constructed from a single piece (“zenkou”) of VG-10 stainless steel, these knives sport an extremely fine surface finish and a convex grind with a right hand bias. VG-10 steel is resistant to rust and corrosion, and the thinness behind the edge and convex geometry helps blaze through the densest ingredients with ease. These blades are very easy and rewarding to sharpen, capable of taking on a blistering edge quite quickly.
