Hitohira NM V10 Damascus Gyuto 180mm Brown Pakka Handle
This NM line is made from VG-10 stainless steel with stainless Damascus clad. NM refers to the first two letters of the two makers responsible for the blade. The steel feels incredibly finely grained, and we found that it offers great edge at around #1000 - #3000, with maximum edge retention.
It features a convex ground bevels, making these knives extremely thin behind the edge, yet they maintain good thickness on the spine for stability. We recommend these knives for both experienced users and beginners with practicality and performance in mind.
