We are pleased to introduce a new brand of knives: Yamato.
The young and energetic craftsmen are producing two lines in White #2 carbon steel so far. Kon-gou and Oboro. The Kon-gou series feature a Migaki finish with a natural stone finish by the cladding line. The Oboro features a thinner geometry and Kasumi finish on the soft iron cladding.
We'd like you to tell us your impressions!
A chef's knife ('Gyuto' in Japanese) is the most versatile blade that can handle almost anything in the kitchen. Their shape and often generous edge length mean that whether it's cutting small tomatoes or portioning a large roast, you can do it with one blade. Most cooks have multiple chef's knives and it is not hard to justify getting one more when it has so much utility.
