The Denka no Hoto knives, crafted by renowned blacksmith Teruyasu Fujiwara, are a testament to exceptional craftsmanship and unparalleled performance. These rustic hand-forged knives feature a core of aogami super (blue super carbon steel), sandwiched between softer stainless steel. This construction yields a blade that combines the acute sharpness and edge retention of carbon steel with the reduced maintenance concerns associated with rusting and oxidation compared to iron cladding. While the blade's impressive Rockwell hardness of around ~65 ensures exceptional edge holding abilities, it will take more time and patience to sharpen.

The Denka no Hoto line features an amazingly thin edge (very high-performance) that makes you feel like you're using a laser in the kitchen. Though with great power comes great responsibility; the Denka no Hoto line is not for a user without the gentle technique that the thin edge demands (otherwise it can micro-chip easily).
