Ashi Hamono has over seven decades of history in Sakai city and is known for making knives using one piece of steel (aka “zenkou” construction). Swedish stainless steel is esteemed for its ease of sharpening, ability to take on a fine edge, and resistance to rust and corrosion. The thinness behind the edge and convex geometry helps blaze through the densest ingredients with little resistance, yet despite is durable enough to use as a daily driver. 

A slicer ('Sujiihki' in Japanese) is a valuable tool for skinning, trimming and/or portioning protein items (fillet of salmon or turkey breast). Depending on the length, professionals use it as a utility blade or use it during service on the line. For home cooks, a slicer is a great blade for those special times of the year where you want to get even slices without striations on your turkey breasts and other roasts.
