The latest from local blacksmith, Matt Sicard, is a gyuto made of crucible steel. The steel itself is made in-house by melting raw components together in a crucible to form an alloy, forgoing the use of pre-made/pre-forged billets. This method allows for full control of the elements that make up the allow. The result is a steel that delivers benefits similar to white steel (shirogami), but more resistant to oxidation and contains higher hardness levesl.

A chef's knife ('Gyuto' in Japanese) is the most versatile blade that can handle almost anything in the kitchen. Their shape and often generous edge length mean that whether it's cutting small tomatoes or portioning a large roast, you can do it with one blade. Most cooks have multiple chef's knives and it is not hard to justify getting one more when it has so much utility.
